Sooji  is a coarse and purified wheat middling of durum wheat. Suji aka semolina is a favourite in India when it comes to various breakfast and Indian dessert (halva) options. This light flour is filling and keeps you full for longer- thus acting as a helpful substitute for people on a diet. Boiled, this can be eaten as porridge. Down South, suji is used to make a lot of delicacies like Rava Dosa, Upma, Idli, and what not. Suji is also used as the final batter to give things an extra crunch.
